What you’ll need:
ð 150g butter
ð 125g sugar
ð 175g self-raising flour
ð 1tsp baking powder
ð 2tsp cinnamon
ð ¼tsp salt
ð 2 apples
What to do:
Preheat your oven to 200°C/gas mark 6 and line a muffin tray with muffin/cake cases.
In a saucepan, melt together the butter and sugar until smooth and free-from lumps.
Chop the apples into small pieces.
In a large mixing bowl, combine the melted butter and sugar, egg and milk and mix. Sift in the flour, sugar, salt, baking powder and cinnamon, and add the chopped apple.
Spoon the mixture evenly into the muffin cases and bake in the oven for 15-20 minutes or until golden brown.
Sprinkle with brown sugar and/or cinnamon to taste.
