What you’ll need:
350g plain flour
1tbsp bicarbonate of soda
2tsp ground ginger
1tsp ground cinnamon
5tbsp golden syrup
What to do:
Sift the flour, bicarbonate of soda, ginger and cinnamon into a large mixing bowl. Add the butter and mix until the consistency resembles breadcrumbs.
In a separate bowl, beat together the eggs and golden syrup. Add to the breadcrumb mixture and mix.
Remove the dough from the bowl and on a floured surface knead it until smooth.
Return the dough to a bowl, cover with cling film and refrigerate for one hour.
Preheat your oven to 180°C/gas mark 4 and line two or three baking trays (the amount needed will depend on the size of the trays and biscuits) with greaseproof paper.
Remove the dough from the fridge and, with a rolling pin, roll out the dough until approximately 1cm thick. Using a man-shaped cookie cutter cut the gingerbread men from the dough and place into the baking trays, ensuring to leave space between them.
Bake in the oven for 8-10 minutes and leave to cool.
Ice and decorate to personal preference.
