It’s Shrove Tuesday and we’re committed to bringing you the best ideas we can for this most delicious of days. Ranging from indulgent sweet treats to supper worthy savoury fillings to make sure your Pancake Day is the best yet.

So here’s a basic pancake batter recipe to get us started

Classic pancake
This basic batter recipe for crêpes and pancakes is a versatile foundation for either sweet or savoury fillings

100g (4 oz.) Plain Flour
pinch salt
1 medium egg
300ml (1/2 pint) milk (or milk and water)

optional: 25g of unsalted butter, melted

1. Sift flour and salt into a bowl, make a hollow in the centre and add egg
2. Mix together, and add liquid gradually until all the flour is worked in
3. Add the remaining liquid and beat well. Leave the batter to rest for 30 minutes
4. If using, whisk the melted butter into the batter
5. For each pancake, heat a small amount of oil or butter in the frying pan
6. Using a ladle, pour approx. 2 tbsp of batter into the pan, and swirl it around until the pan is evenly coated
7. When golden brown underneath, turn and cook the other side
8. Slide out of the pan and either serve immediately, or stack on a plate with greaseproof paper in between
